Dim Sum Garden

Underneath a tunnel which acts as a homeless shelter, and next to a Chinatown bus station sits a the neon-fringed, sparsely decorated Dim Sum Garden. This Shanghainese eatery, which is not really a traditional dim sum house, has gotten praise for their hand drawn noodles and the (apparently in Philly) elusive Shanghai soup bun (Xiao Long Bao). Unfortunately, Shanghai soup buns — a sort of steamed dumpling filled with pork and hot soup — are not vegetarian. Carry on. What I love about the grungy-looking (although, it was clean) Chinese eatery is the smiling service. What I love even more is the decisiveness and confidence our smiling server had in recommending the better of two dishes — even if she might have been lying just to get on with her job. Thank you for having conviction. The vegetable steamed buns are not the steamed soup buns most people come looking for, but are the thicker bread-like buns, and are filled with a mixture of chopped Shanghai cabbage, black mushrooms, and tofu. Omelet (with video!)

The mysterious omelet. Apparently Julia Child devoted ten pages to the description of making omelets. I’ve read accounts of omelet making that drove people mad trying to attain illusive omelet perfection – soft, creamy, buttery; cooked through, but without any brown spots. I’ve read still others where the first step is to get your “20 year old, perfectly seasoned omelet pan.” I’ve seen ingredients for omelets that include water. Ones that say you must have room temperature eggs, cold unsalted butter, an aluminum skillet, perfect heat, stir with a fork, shake the pan back and forth, practice with beans in the skillet – I can see why people have gone crazy. Michael expressed interest in learning to make omelets after seeing the old episode of Julia Child’s The French Chef on the subject – I guess 30 minutes is equal to about 10 pages. So I did some research, bought a decent omelet pan and let him loose in the kitchen over the past month. I’m sure this recipe has not attained perfection on the French scale, but I think he’s developed his own quite tasty recipe. Ming’s Pasta

Plain can be tasty: pasta tossed with Bovril and butter, a dish not for the faint of weight. I realise that I don’t have any food recipes to blog since it’s still CNY and I’m still eating out, at restaurants, friends’ and my MIL’s. So before all my readers run away, here’s the world’s simplest way to serve pasta according to my son Ming who cooked it up, literally. All you need is pasta, preferably the ones with a hollow center like macaroni and bucatini, Bovril and the best butter. That would be Lurpak or President butter here but if you can get Kerrygold, which we used to get, that’s good too. A cheaper but still good butter is Anchor block butter. This is a pasta dish for hungry teenagers whose moms are lazy/too busy/ran out of money/all the previous excuses/reasons. Ming’s Pasta 1. Boil your pasta in salted water as usual (and never add oil, it’s unecessary and makes the pasta too slippery for the sauce to cling) and to the texture you like. Drain well. 2. First. The four winners of the Surf & Turf sushi weekend have been contacted. However …as of Tuesday morning, only three have responded.
