Cook the Book: ‘The Tex-Mex Grill and Backyard Barbacoa Cookbook’

9f8eca7b59xgrill.jpg 120x150 Cook the Book: The Tex Mex Grill and Backyard Barbacoa Cookbook

With those endless baskets of chips and salsa, pitchers of frozen margaritas, sizzling fajitas, and chile pepper Christmas lights it’s pretty difficult not to enjoy a Tex-Mex meal. But somehow this Americanized, Texas-sized adaptation of Mexican food isn’t a cuisine that gets too much respect in the food world. Robb Walsh , former restaurant critic of the Houston Press is changing that one grill at a time with his newly released cookbook, The Tex-Mex Grill and Backyard Barbacoa Cookbook . The Tex-Mex Grill and Backyard Barbacoa Cookbook isn’t just a grilling cookbook, it’s a collection of recipes and essays that have been put together in a manner that explains the unique history of just how Tex-Mex cooking emerged. From the first frozen margarita to the quintessentially Mexican-American phenomenon that are Sonoran Hot Dogs Walsh takes the reader on a culinary tour of Texas with plenty of tasty stops and open-air cooking along the way. Everyday this week we will be firing up the grill and testing out recipes from The Tex-Mex Grill and Backyard Barbacoa Cookbook including some enormous Tortaburgers , Texas-style Tacos al Pastor , and Tri-Tip Fajitas , and a few Watermelon Margaritas . Win ‘The Tex-Mex Grill and Backyard Barbacoa Cookbook’ Thanks to the generous folks…

Direct from the Johnny Cupcakes website is the most up-to-date version of his month-plus long suitcase tour, hitting many familiar names to cupcake lovers as well as non-cupcake bakeries. For those who don’t know, Johnny Cupcakes sells cupcake t-shirts, hoodies, bags, accessories and other items adorned with cupcakes. Click here to watch a video interview I did with him last year at his Boston store’s 3-year anniversary event. I love my tote bag, and see his stuff out and about fairly often in New York. We’ll have someone covering the New York City April 2nd kickoff and hope you’ll check out this fun collaboration with so many shops and spaces. From his post (keep visiting that site for the latest news and/or follow him on Facebook or Twitter ): I’ll be driving the CupcakeMobile all around the USA to sling t-shirts out of my suitcase and hang out with my customers. I think it will not only be a great way to have personal meet-ups with all of you, but also a nice way to celebrate the humble beginnings of my brand. There will be six suitcase exclusive t-shirts and a few other specials that can only be purchased on my tour. Each stop on the tour will be hosted by…

Grilling: Wilted Spinach and Portobello Salad

5d9be4ad17salad.jpg 150x99 Grilling: Wilted Spinach and Portobello Salad

From Recipes [Photograph: Joshua Bousel] I told myself that after a no-holds-bared eating fest that happened over the holidays in Houston (seems to happen every time I visit that city), that I would slowly simmer down my gut-busting diet. With the cold weather and the steady stream of party foods that followed, my plan never came to fruition. Nearly two months later, it’s high time I finally act, and over the weekend I decided that a salad was in store—grilled, of course. I’m not much of a recipe follower when it comes to throwing together some leafy greens and a vinaigrette, but this particular one caught my eye because it required the grilling of spinach. Finally, an interesting way to use my underloved accessory, the grilling basket. Not only was the dressed spinach taken to the flames, but also the sage-rubbed portobellos and walnuts. This was a grilled salad through and through. This meal fit into the season as much as a salad could. The mushrooms gave it a heartiness, the walnuts a nice toasty crunch, and the warm, wilted spinach was like a hint of the freshness that will soon come. Now the trick is to keep up some healthier eats while enduring …

Cupcake Smackdown in Houston seeks judges

efc8e27c555311d2e4b926bb217edeb0 Cupcake Smackdown in Houston seeks judges

Houston Press is hosting a Cupcake Smackdown on January 24th and is looking for judges! Cupcakes from a dozen restaurants and bakeries around Houston will be pitted against each other in an epic gladiatorial event that’s too big for our weekly Food Fight. To keep things interesting, we’ll also have a batch of homemade cupcakes thrown in to the mix to see if our judges can tell the difference. Cupcakes will be blind taste-tested by a panel of four judges on cake taste, frosting taste, cake texture, frosting texture and cake-to-frosting ratio. Finally, the cupcakes we’ve kept in reserve will be revealed and the judges’ blindfolds removed so they can judge the overall appearance of each cupcake. The winner will be crowned the Eating Our Words Cupcake King. To assist us in keeping this battle under control, we’ve enlisted experts: Plinio Sandalio, pastry chef at Textile, and Jody Stevens, pastry chef at Gravitas and owner of Jodycakes, will be our two professional judges. But we need your help. We need two of our readers to fill out the judging panel…

Further insight into Houston’s Cupcake Scene

(Lemon Raspberry cupcake from Sugarbaby’s) Continuing from my previous preliminary look into the status of cupcakes in Houston, TX, I’ve since gotten in touch with Bridget Gould, owner of Sugarbaby’s Cupcake Boutique. Sugarbaby’s was started in 2007 as the first cupcakery in Houston, so I figured I should start from the roots. As the local pioneer to spotlight cupcakes in her shop, Bridget provides an inside perspective on the current and possible future cupcake landscape. I asked her for her general thoughts on the Houstonian cupcake scene, and this is what she had to say: Yes, Sugarbaby’s was the first cupcake specialty bakery in Houston. When we developed our concept, we really wanted to present this new trend in a different manner than what we’ve seen in other cities. Our Southerners appreciate service, a little personality, and anything unique. We wanted something more than the walk up to the counter, pay and go kinda place. We wanted our clients to have an experience – something to really tell their friends about. So we offered a gift boutique, a dining area to hang out and enjoy your desserts, and a party room. As for the cupcake scene in Houston, I think we are dealing with a very different way of doing business here than what I see in other…

Exploring the Cupcake Scene in Houston, TX

45c891871cvelogo 150x150 Exploring the Cupcake Scene in Houston, TX

In the spirit of the holiday season, I’m going to take a look at something a little more w arm and cheerful while snow continues to cover NYC. I recently took a trip back to my hometown of Houston, Texas (or rather, Sugar Land, to be more accurate). One of my primary goals was to re-explore the culinary landscape of Houston. So, onto my determined cupcake quest! My good friend Tina helped chauffeur me around to two cupcake stores in Houston. First up is Crave Cupcakes: As the logo boasts, the cupcakes are baked fresh daily, and there is a helpful calendar on their website that states the weekly baking schedule for each flavor. The logo and overall setup of the store actually reminds me a lot of Sprinkles. We split the white chocolate macadamia nut, a hefty Texas-sized cupcake with a simple and smooth white chocolate cream cheese frosting that belies the mixture of macadamia and chocolate chips in the cake portion. A relatively new addition to the Galleria area, Crave is a convenient sugar rush stop after a hectic afternoon of shopping. Next, we headed to Sugar Baby’s Cupcake Shop, the first Cupcakery in Houston. Stepping into the store for the first, or even hundreth, time makes you feel as if you’ve been whisked away…

Salted Caramels with Orange Scented Sugar

681a0e85c8s main 150x112 Salted Caramels with Orange Scented Sugar

I asked you last week what recipe you’d rather have for this week’s Craft post and Salted Caramels seemed to be the most popular vote. So, here you have it: Salted Caramels with Orange Scented Sugar. Head over to Craft for the recipe . I’m curious what is on your Christmas dinner menu. We haven’t really settled into a tradition yet in my family. I keep trying different things out. The most memorable have been Beef Tenderloin, Stuffed Chicken Breast, Pork Loin, and last year’s Italian Feast . Here is our menu this year: Roasted Pork Tenderloin with Bacon and Herbs Rosemary Roasted Potatoes Balsamic Glazed Asparagus Rustic White Bread Clementine Spice Cake I am going for simple-no-fuss while still maintaining elegance. This is our first year traveling for Christmas. With small children we’ve usually opted to stay at home. This year we are in Houston with my mom and siblings where it doesn’t quite feel like Christmas because it’s so warm. When we got in last night at 11 pm it was 70 degrees F! The kids are having a blast exploring Grandma’s already. Where ever you are, I hope you have a Merry Christmas!
