Pinckney Street, Madison, WI 53703 ( map ); 608-310-4545 ‎; theoldfashioned.com Cooking Method: Grilled Short Order: Flawless burger from a restaurant that oozes Wisconsin Want Fries With That? No idea, but the cheese curds are the best I’ve ever had Price: Build your own burgers start at $5.95; The Old Fashioned House Burger, $8.95 In the shadow of Wisconsin’s majestic Capitol Building sits The Old Fashioned , a restaurant that fits so well in the heart of Madison that it’s hard to believe it’s only a few years old. Founded in 2005 by three people with solid roots in the local eating scene, The Old Fashioned screams Wisconsin in every way . The restaurant has a near fanatical focus on using local food from all over the state, ranging from meats to produce to more than 150 beers to cheese from over 25 producers . In addition to the burger I was there to try, The Old Fashioned serves up a wide variety of German and Scandinavian influenced dishes, something very appropriate given the state’s history. And being friendly folk of the Upper Midwest, there’s a daily meat raffle in which …

From A Hamburger Today [Photographs: Damon Gambuto] Checkers Downtown 535 S. Grand Avenue, Los Angeles CA 90071 ( map ); 213-624-0000; checkersdowntown.com Cooking Method: Grilled Short Order: An upscale dining room makes a decadent burger Want Fries with That? Yes—they’re straightforward and satisfying Prices: Checker’s Cheeseburger (w/fries), $14 (Lunch and Bar Menu) Notes: The Thursday night’s happy hour is called FOUR because selected drinks and small plates are $4 a piece from 4 p.m – 8 p.m. I’d say it’s in the running for best Happy Hour in town. Each week’s deals are previewed on their Facebook page Sitting in one of Los Angeles’ most storied neighborhood’s, Bunker Hill, Checkers Hotel is an attractive piece of the art deco city’s history. The building dates back to the 1927 when it was opened as the Mayflower Hotel. It lacks the grandeur of its more famous neighbor, The Millennium Biltmore , but recently has managed to do something that not too many hotels in town have: garner some attention for its dining room. Most of the Los Angeles food scene talk about how Checkers Downtown has focused on their very clever and very tempting happy hour. They call it FOUR and, as you’d imagine…

Lackluster Burgers from 96th Street Steakburgers in Indianapolis

From A Hamburger Today [ Photographs: Nick Solares ] 96th Street Steakburgers 4715 East 96th Street, Indianapolis IN 46240; map ); 317-844-6351; 96thstreetsteakburgers.com Cooking Method: Smashed Short Order: Combining themes from two of the nation’s finest fast food chains, 96th Street has all the trapping to produce a great burger but suffers from poor management, and consequently poor execution Price: Single, $2.59; double with cheese, $3.99 96th Street Steakburgers combines themes from two of the world’s finest fast food chains: Steak ‘N Shake and In-N-Out Burger . The burgers they serve are the smashed type —wafer thin patties mostly made of crust—as served by Steak ‘N Shake. But they also adopted the West Coast topping model by offering “special sauce,” otherwise known as Thousand Island dressing. Further, they even offer their burger cooked in mustard and onions, an obvious homage to In-N-Out’s “animal style” burgers. 96th Street also fulfills the fresh, never frozen ethos embraced by the two chains. Indeed, the ingredients of the two burgers I sampled were beyond reproach—the vegetables were vibrant and fresh, the bun spongy and plump, and the beef had a clean flavor. Unfortunately, despite all these advantages the burgers …

Proving the Cow’s Superiority with a Big Baby at Perros Brothers Gyros in Olympia Fields, IL

b3b2674abcintro.jpg 150x150 Proving the Cows Superiority with a Big Baby at Perros Brothers Gyros in Olympia Fields, IL

From A Hamburger Today [ Photographs: Daniel Zemans ] Perros Brothers Gyros 3770 Lincoln Hwy, Olympia Fields, IL 60461 ( map ); 708-748-5666‎ Cooking Method: Griddled Short Order: Big Babies from this south suburban diner are not remotely gourmet, but they are remarkably satisfying Want Fries With That? Not really. The frozen potatoes are cooked properly but suffer from poor quality. They are useful as vessels for fake cheese Price: Burgers, $1.55; cheeseburgers, $1.65; Big Babies, 2 for $4; Super Gyros, $4.95 As AHT readers are well aware, we are in the midst of a glorious burger renaissance. But even as that occurs, the pig seems to get a whole lot more play these days than the cow. I suspect that’s for two reasons: pork is cheaper and its relatively mild flavor allows chefs to show off quite a bit more. I’m a fan of both meats, but when we’re talking about eating them in their simplest state, there is no question at all that the cow is the vastly superior edible animal. And proof can be found at Perros Brothers Gyros in the south suburbs of Chicago. There is nothing gourmet about Perros Brothers. These are pre-frozen, factory-formed patties that were likely made from a mixture of cows…

Grand Avenue, Chicago, IL 60642 ( map ); 312-421-5547‎; maystreetmarket.com Cooking Method: Pan seared Short Order: Anyone who thinks a burger has to be made out of beef needs to try the duck burger at May Street Market Want Fries With That? Yes, they are a fine example of the breed Price: $14 without foie gras, $19 with, but a better deal as part of the prix fixe menu There’s no doubting the skills of chef Alex Cheswick, chef/owner of May Street Market . In addition to an education at the Culinary Institute of America , Cheswick also has stints at Le Francais and Tru under his belt along with a couple of high-end restaurants in Germany. And thanks to his time in Deutschland, Chewsick knows a thing or two about burgers along with their cousins, frikadellers . At his four-and-a-half-year-old Chicago restaurant, Cheswick puts that knowledge to good use with his exceptional and nontraditional take on a burger. For those who immediately reject any burger not made from ground beef, just pretend this is an article about duck frikadellers and come along for a delicious ride. Though…

From A Hamburger Today [Photograph:Damon Gambuto] I don’t want to be glib about the current troubles in the print media world, but when I got this offer from the Los Angeles Times in the mail not too long ago I knew I had to post about it. They’re offering a $20 In-N-Out gift card if you order home delivery of The Times (Thursday-Sunday) for a year. I read all of my news online, but for In-N-Out I might be convinced to get my fingertips covered in ink again.

25b69f6a51bkribs.jpg 150x83 Reality Check: Burger Kings Fire Grilled Ribs

Editor’s note: John M. Edwards has reviewed a handful of fast food burgers for A Hamburger Today’s Reality Check series— Burger King’s Iron Man Whiplash Whopper , The McDonald’s Angus vs. Burger King’s XT , and McDonald’s Mac Snack Wrap . Today he’s bringing Reality Check beyond burgers with a review of Burger King’s new ribs. Press photo of the ribs. [Photograph: Burger King] When I got the call from Serious Eats to tackle Burger King’s new ‘Fire-Grilled Ribs,’ I was so elated I broke into song. “I want my baby back baby back ribs, ” I started singing as I headed for the nearest BK. Could it really be possible to get great ribs at a drive-thru? (Bass note: “Barbecue sauce.” ) Burger King recently introduced a new line of ribs to its menu, offering them in six- or eight-piece value meals. Note the term “piece.” Though as an American adult I ought to know better, having looked at the BK Menu at the drive-thru, I expected ribs at least four or five inches long. When I opened the box, I found…

From A Hamburger Today [Photographs: Damon Gambuto] Hamburger Hamlet 9201 W Sunset Blvd., West Hollywood, CA 90069 ( map ); 310-278-4924; hamburgerhamlet.com Cooking Method: Griddled Short Order: Still tasty after all these years. This Hollywood original has lost its authenticity, but the burgers haven’t Want Fries with That? Yes; the regular fries are flavorful and satisfying Prices: The All American Classic Cheeseburger, $10.95 Notes: If you are in LA, take a trip to the original on Sunset and head to a booth in the back for the authentic experience The idea that Los Angeles is a one-industry town can make visiting it a bit of a let down. Certainly the movie business defines the popular imagination of the city, but so much of the reality of Los Angeles lies in the basic, quotidian professions that make up all cities. You won’t see movie stars on every corner, and you won’t find much Hollywood history breathing without the life support of the tourist machinery. Though we’ve become much bigger than just a movie town, every now and then you’ll find yourself in a place with…
