Christine Borges at Miami New Times blog Short Order got a special sneak peek. Below is part of her review and her photos: In honor of the True Blood season three premiere on Sunday on HBO, the shop’s created a TruBlood — Madagascar bourbon vanilla bean cake filled with a blood orange curd, and topped with a blood orange buttercream frosting. It will only be available on Sunday (for the premiere) and in limited quantities, but they’ve already started to receive pre-orders. ​We got an exclusive taste test of the confections, and they’re good. The vanilla bean cake is just the right amount of subtlety for the overpowering blood orange filling, and the buttercream frosting is light and fluffy to make the cupcake just sweet enough. The fondant TruBlood medallion adds a little humor to the treats, and feels almost like a separate little cookie with its crunchy texture. photos by Christine

Our pal Shanna at A Cup Full of Cake made filled chocolate pomegranate cupcakes! She used POM Wonderful and she has the recipe plus step by step photo instructions. She writes: I always use my apple corer or a pastry bag to fill the cupcakes but I had seen someone using circle cutters recently for making filling holes in cupcakes and I liked that I had a depth gauge on them. I have been known to push my apple corer a weeeeeee bit too far and blow out bottom of cupcakes. oops. So I got my Ateco circle cutter set out and used the two that were the next two sizes up from the smallest one in the set. I wasn’t sure which one I wanted to use. So I experimented on a couple first.

But be warned…she writes about some of the travails of making the filling: Let me tell you all, there are some really gross filling recipes out there! One that I tried was basically sweetened country-style gravy. I gave it a shot because it was reminiscent of pastry cream–minus the egg yolks–and although I was skeptical, the recipe’s reviewers seemed to like it. So I gave it a shot, and wow… it was so incredibly vile. That was failure number one. Two and three were much better but they either lacked the right texture or the filling absorbed into cake within 24 hours. Eventually, I figured that whatever was inside a hostess cupcake was not man-made and was created with technology on par with CERN’s new Hadron Collider. So I gave up. That is, until I had a breakthrough while making fudge for the holidays… I was going through a lot of marshmallow creme and while noshing on a spoon it came to me….this stuff is pretty close! Really close, actually. So I decided to give the cupcakes one more…
