Fauxstess mini cupcakes: my gourmet ripoff of a classic. dark chocolate cake filled with homemade vanilla buttercream topped with dark chocolate ganache i made (using Bissinger’s chocolate) and a swirl made with the buttercream filling. And the inside: Gluten free dark chocolate cupcakes with pink vanilla buttercream and heart shaped sprinkles for a 40th anniversary. Thin Mint cupcake: My tribute to the Girl Scouts… Chocolate cupcake, homemade pink mint frosting, and a Thin Mint cookie. Kosher for Passover flourless chocolate cake cupcake with strawberries Princess cupcakes – I found these tiny tiaras at a party store for 25 cents each. I topped vanilla cupcakes, vanilla buttercream and lavender sugar crystals with the tiaras. As a tribute to my beloved St. Louis Cardinals making it to the division playoffs I give you… baseball cupcakes. The liners have lttle sports balls on them. The top is vanilla frosting. But be warned…she writes about some of the travails of making the filling: Let me tell you all, there are some really gross filling recipes out there! One that I tried was basically sweetened country-style gravy. I gave it a shot because it was reminiscent of pastry cream–minus the egg yolks–and although I was skeptical, the recipe’s reviewers seemed to like it. So I gave it a shot, and wow… it was so incredibly vile. That was failure number one. Two and three were much better but they either lacked the right texture or the filling absorbed into cake within 24 hours. Eventually, I figured that whatever was inside a hostess cupcake was not man-made and was created with technology on par with CERN’s new Hadron Collider. So I gave up. That is, until I had a breakthrough while making fudge for the holidays… I was going through a lot of marshmallow creme and while noshing on a spoon it came to me….this stuff is pretty close! Really close, actually. So I decided to give the cupcakes one more…
