AZNightbuzz.com looks at the popularity of cupcakes in Tucson, Arizona : In the past three months, three cupcakes-only shops have opened across town. Red Velvet Cupcakery, near the University of Arizona, was first. Then, CupCakes came to midtown at Grant and Swan roads last month. Mini’s — from wedding-cake maven Jaynie Rossi — is due to open any day in the lower level of La Encantada. So what is it about the petite pastry that people find so appealing? “It’s a luxury that anyone can afford,” says Rossi, who owns Ambrosia of Tucson bakery. “You’re not buying a cake for 10 people that you feel like you have to eat; you just get a little treat. It’s a little bit naughty but it’s not bad. You can afford it emotionally, physically and financially.” Rossi has been baking and decorating cupcake wedding cakes for about a decade. After watching people at bridal fairs sneak back to her booth again and again to swipe another cupcake, Rossi decided to plunge into the cupcake-only market.

Free cupcakes Saturday in Tucson at new Red Velvet Cupcakery

From Marketwatch: Red Velvet Cupcakery is opening in the heart of Tucson near the University of Arizona, introducing the city to its delicious gourmet cupcakes. Red Velvet will celebrate its grand opening on Saturday, September 19 by offering complimentary cupcakes from 11am to 3pm. Red Velvet’s owner, Bonnie Gordon, a professor at Central Arizona College says, “Often visiting Los Angeles and NYC, I developed a love for gourmet cupcakes that satisfied my sweet tooth and took me back to my mother’s kitchen. When my son, Aaron, made a splash opening the original Red Velvet Cupcakery in downtown Washington, DC, I decided I would love to have my own shop in a unique, vibrant area of Tucson.”… Red Velvet cupcakes include: morning call – chocolate espresso cake with mocha butter cream; devil’s food – chocolate-buttermilk cake with bittersweet chocolate ganache; peanut butter cup – chocolate chocolate-chip cake with salted peanut butter frosting; and southern belle – red velvet cake with whipped cream cheese frosting.
