Another holiday favourite, this one focused on left-overs with some greens and sweet potatoes instead of the more traditional peas and mash. Canada’s thanksgiving is in early October, and I made a faux-turkey. And of course I made too much. This sandwich is a greasy spoon and kitchen staple in the midwest in late November. The black trumpets made a very savoury mushroom gravy for this dish.
